			<content:encoded><![CDATA[<p>This cheese cake recipe is so quick and easy to prepare and is much healthier than the traditional recipe. Top with berry topping and you have an elegant dessert. My family doesn&#8217;t even know they are eating healthy foods it tastes so good.</p>
<p>In a food processor or blender add:</p>
<p>4 cups of any of the following in any combination<br />
- yogurt<br />
- cottage cheese<br />
- tofu (use only silken)<br />
- light cream cheese<br />
- 3 large eggs<br />
- 1/4 cup splenda or honey<br />
- 1 Tablespoon lemon juice<br />
Optional:<br />
- 1 or 2 Tablespoons cornstarch which will make your cake thicker.</p>
<p>Bake in 350 degree F oven for 45 &#8211; 60 minutes until the top puffs lightly all the way to the center.</p>
<p>Top with fresh berries, or berry topping. Enjoy.</p>

			<content:encoded><![CDATA[<p>Near the end of summer, fresh blue berries are plentiful and delicious. They are also a superfood, with many health benefits. You can also use them in many different desserts or jams.</p>
<p>Following is basic recipe that I use for a topping on cheesecake, fresh baked bread, crumble, french toast or just by itself with a spoon! Use your imagination and enjoy the result. This recipe is very quick and easy and tastes wonderful.</p>
<p>- 2 cups fresh or frozen blue berries<br />
- 2 Tablespoons water<br />
- 1/2 cup (or less) splenda</p>
<p>Bring to a boil and simmer for 2 minutes. Then combine:</p>
<p>- 1 Tablespoon water<br />
- 1 Tablespoon cornstarch<br />
- 1 Tablespoon lemon juice</p>
<p>Add to the hot blue berry mixture until thick (about 30 seconds) and remove from heat. If you want it thicker, just add more cornstarch and water.</p>

<p>Add ingredients one at a time and blend until the mixture forms a ball.Â  Form into bite-sized balls ( you can roll in unsweetened coconut or sesame seeds)</p>
<p>If you don&#8217;t have a food processor, just mix all ingredients in a bowl until blended (if you are feeding these treats to toddlers, grind the seeds in a coffee grinder).</p>
<p>Variations:Â  pumpkin seeds, almonds, cashews, chopped dates, raisins, vanilla, cinnamon or just use your own imagination.</p>

<li>For an change try adding 2 to 3 Tablespoons Lemon Extract and 1/8 cup poppyseeds instead of the other flavorings.</li>

<p>Preheat oven to 325 degrees F.Ã‚Â  Stir together flour, splenda, b. powder, b. soda and spices.Ã‚Â  Add egg whites, bananas, vanilla and applesauce just until combined.Ã‚Â  For muffins, line muffin tins with paper cups for easy clean-up, bake for 30 minutes (you can adjust the amount of time you cook this muffins depending on how moist you prefer your muffins)Ã‚Â .Ã‚Â  For bread, pour batter into prepared loaf pan and bake 55 minutes.Ã‚Â  You can use any combination of flavors that you prefer, or try different combinations every week.Ã‚Â  I love these for a snack and a quick pick-me-up and bake them every week.</p>

<li>3/4 cup part-skim ricotta cheese (I use plain yogurt)</li>
<li>3/4 cup egg substitute</li>
<li>1/2 cup <a title="Splenda" href="http://www.splenda.com" target="_blank">splenda</a> or 1/2 tsp. stevia</li>
<li>1 teaspoon ground ginger</li>
<li>1 teaspoon vanilla extract (I was out of vanilla extract so I used coconut extract and it was really good)</li>
<li>1/2 teaspoon ground nutmeg</li>
<li>1/2 teaspoon cinnamon</li>
<li>1/8 teaspoon salt</li>
</ul>
<ol>
<li>Preheat the oven to 350 degree F. Spray a 9 &#8221; glass pie plate with non stick cooking spray. If you are making a crust, sprinkle cracker crumbs over bottom.</li>
<li>In a food processor or blender, combine the cottage, ricotta (or yogurt); process until smooth, about 1 minute. Transfer to a large bowl; stir in the egg substitute, sugar substitute, ginger, vanilla, nutmeg, cinnamon and salt. Reserve 1/4 cup of the batter. Add the pumpkin to the batter; stir until blended. Scape the batter into the pie plate, then drizzle the reserved batter in 3 concentric circles over the pumpkin batter from the center toward the outer edge; about 2&#8243; from that line, lightly draw the knife through the batter from the outer edge toward the center. Repeat around the pie, alternative directions to make a spiderweb &#8211; this is optional, you can just pour all the batter into the pie plate if you like.</li>

<ul>
<li>1 can white or red kidney beans or black beans, drained and rinsed</li>
<li>1/2 cup skim milk (or soy fat free milk)</li>
<li>1/3 liquid egg</li>
<li>1/4 canola oil</li>
<li>1 Tblsp. vanilla</li>
<li>3/4 cup Splenda (1/2 tsp. Stevia)</li>
<li>1/2 cup whole wheat flour</li>
<li>1/2 cups unsweetened cocoa powder</li>
<li>1 tsp. baking powder</li>
<li>pinch salt</li>
<li>1/2 cup chopped toasted pecans</li>
</ul>
<ol>
<li>In food processor, puree beans until coarse. Add in milk, liquid egg, oil and vanilla and puree until smooth, scaping down sides a few times &#8211; set aside.</li>
<li>In large bowl, combie sugar substitute, flour, cocoa, baking powder and salt. Pour bean mixture over flour mixture. Stir to combine. Scrape batter into parchment paper-lined 8 inch square baking pan, smoothing top. Spinkle with pecans.</li>
</ol>
<ul>
<li>Bake in 350 degree F over for about 18 minutes or until cake tester inserted in centre comes out clean. Let cool.</li>
<li>Makes 16 brownies.</li>
