Making Muffins

Now that summer is almost here, I don’t want to be in the kitchen making muffins every weekend (the only time I usually have time to make our weekly muffin ration).  If you want fresh muffins each week without the hassle of all the preparation – just make get a large air tight container and mix the dry ingredients together.  You can multiply the basic recipe by any amount, then just take out 1 1/2 cups of the mixture on the day you want to bake fresh muffins, mix in the dry ingredients and bake.  Easy and fast.  Why didn’t I do this years ago??? 

You can also take the dry ingredient mixture with you when travelling, then just add in the mashed banana, egg whites and vanilla.  I did this last year when travelling to a race.  I love the muffins during training and racing.  They digest easily and are very good.

Per 100 g (1/2 cup)

Lean Ground Pork       17 g fat (6 g sat) 230 cal.

Lean Ground Beef       15 g fat (6 g sat) 210 cal.

Lean Ground Turkey     6 g fat (2 g sat) 140 cal.

We have been using ground turkey in place of ground beef and find that there really is no difference.  You can use ground turkey in place of beef in all recipes.  It cooks faster, contains much less fat (saturated fat) and calories.  I’ve never like chicken and tomato sauce, but with ground turkey, I can’t tell the difference from beef.  You can add TVP in the same way as you would with beef.
