Taco Chicken
This is a simple, fast, tasty chicken dinner. I make this in a slow cooker, and just let it simmer all day, but you could just as easily put it in the oven and bake until the chicken is fully cooked. You could also put in any vegetables that you like and just cook it all together.
- 1 large onion sliced
- l glove of garlic
- 4 boneless skinless chicken breasts (cut in pieces)
Brown in slow cooker, then add:
- 1/2 package sodium reduced taco seasoning
- 1 can reduced-fat cream of chicken or mushroom soup
- 1 cup salsa (optional)
- 1 cup water
- vegetables (optional – you may need to add more water depending on the amount of vegetables)
Stir to mix ingredients then simmer in a slow cooker 3 to 4 hours, or just leave all day until desired consistency. Top with reduced fat sour cream or plain yogurt if desired.
